Bacon, Potato, Leek & Crab Chowder

Ingredients

Lump crab meat, 1 lb.
Several strips bacon
Leeks
Carrots
Celery
Thyme
Bay leaf
Flour
Potatoes, peeled & chopped
Dry cooking sherry
3 cups half & half
3 cups chicken stock
Hot pepper sauce
Old Bay seasoning

Instructions

 Saute chopped bacon in olive oil.

Add

chopped leeks
chopped carrots
chopped celery.
fresh thyme sprig
bay leaf
Cook a bit. Add a sprinkle of flour.
Add peeled & chopped (thin slices) potatoes.

Add

a little dry cooking sherry
3 cups half & half (or half milk/half cream)
3 cups chicken stock
dash hot pepper sauce
Old Bay seasoning to taste
Bring to a boil. Lower to a simmer and add lump crab meat.
