Creole Crab Croquettes

2 tbsp butter

2 tbsp flour
1 cup milk@ room temperature

1 clove minced garlic
1/2 tsp salt

1/4 tsp white pepper
1/2 pound crab meat

2 hard boiled eggs chopped
1 egg beaten cracker crumbs
oil for frying


1. Melt butter in saucepan until bubbling; gradually add the flour stirring constantly with a whisk.

2. Slowly add the milk to make a cream sauce.

3. Add the seasonings and crab meat. Mix well. Add the chopped eggs.

4. Put the mixture in the refrigerator for about two hours; then shape into small balls.

5. Roll in cracker crumbs and deep-fry in oil until golden brown. Serves two.
